Mezzo Secco Monterey Cheese is made according to a very old recipe, made for the time that refrigeration was still rather traditional. A Mezzo Secco Monterey Jack does not run easily, but is not as firm as a dry Monterey Jack - hence Mezzo Secco is a partially dry Monterey Jack.
