Abbaye Sainte Mere is cheese from the Normandy area in France; the Normandy coast has rich pastures fed by the Atlantic sea breeze. This gourmet cheese is a classic soft cheese washed with Trappist beer. The washing and maturing creates an aroma and a sticky rind, but also influences the flavor of the cheese, which is creamy, sweet, slightly salty and flavorful.
Each time you receive a washed rind cheese, or any stinky cheese for that matter, allow the cheese to breathe a little, before you serve it, this disperses the aroma and makes the cheese more approachable. Many stinky cheeses have a wonderful flavor, you just need to try it.
