Le Maitre Seguin is a live ladled 'moulded' cheese made from goat's milk. It is a 'living' cheese, which means that it becomes dryer and more numbly after a while; in approximately three weeks it is excellent to serve with aperitifs.
Le Maitre Seguin is not wrapped and can thus ripen slowly gaining in character, when kept in the fridge.
This small gourmet cheese is made by Sevre et Belle; a small cooperative in the village of Celles-sur-Belle in the West of France, founded in 1893. Throughout the generations, Sevre et Belle has changed and adapted, creating products of consistently exquisite taste.
