Olivet au Foin is a modern soft cheese with a white mould, made from pasteurized cow's milk in the Loire region. It resembles Camembert in flavor, but is milder and decorated with fine strands of hay (foin) on which it matures for approximately 3 months.

The cheese's interior is soft and pale yellow in color and slightly salty.
