Société Roquefort has been around since 1863. The secret of the manufacture of this great gourmet cheese lies in the cellars built in the 17th century. The air circulating in the cellars maintain the ideal conditions for the development of the subtle and unequalled flavor of Roquefort Société.

In accordance with the ‘AOC Roquefort’ regulations, the production of Roquefort requires whole, raw, Lacaune ewe’s milk and the milk must come from within the ‘Roquefort region’. Ripening must take place only in the cellars of the village of Roquefort. Situated at the foot of the Combalou rock fall, the cellars belonging to Société are the oldest of the village. After 3-10 months of ripening, the cheeses are placed into their final packaging and are ready to be sold.

Roquefort Société has a fine milky-white body veined with emerald green and has a well-balanced flavor.
