Our Handful of French Cheese shows the diversity of gourmet cheeses this country has to offer: Comte - (8 oz.) also known as Gruyere de Comte, is made from the milk of the Montbeliard cow. The cheese is hard, straw-colored, contains some medium-size holes with a floral aroma with nutty fudge flavors developing in the more mature cheese. Mimolette - (6 oz.) a pressed cooked cheese that is aged for 12 months.
