The French are renowned to have a vast collection of gourmet cheeses and it would not be difficult to create a number of assortment to encompass all the cheeses from France. Our Handful of French Cheese shows the diversity of cheeses this country has to offer:
Comte - (8 oz.) also known as Gruyere de Comte;, is made from the milk of the Montbeliard cow. The cheese is hard, straw-colored, contains some medium-size holes and has a tendency to crack on cutting. Comte; has a floral aroma with nutty fudge flavors developing in the more mature cheese.
Mimolette - (6 oz.) a pressed cooked cheese that is aged for 12 months. It has a distinctive flavor of butterscotch and caramel. The paste is dyed to a deep orange color, the texture is hard-firm and breaks rather like fudge.
Blue d'Auvergne - (8 oz.) has a wonderful aroma, a rich taste; the saltiness increases with the incidence of veining. The overall flavor is piquant but not overly sharp.
