This semi-soft pasteurized cow's milk cheese has small eyes, reminds one a little bit of certain Scandinavian cheeses, like Tilsit or Esrom and is wrapped in a vibrant red wax. This cheese is uniquely made by the New Zealand Whitestone Cheese Company and is named after the Airedale farming district in North Otagos rolling lowlands.
