Aged Airedale has a full bodied flavor profile with a strong to sharp finish that intensifies with maturity.

This semi-soft pasteurized cow's milk cheese has small eyes, reminds one a little bit of certain Northern European cheeses, like Tilsit or Esrom and is wrapped in a vibrant red wax. This cheese is uniquely made by the New Zealand Whitestone Cheese Company and is named after the Airedale farming district in North Otagos rolling lowlands.

We cut and wrap this New Zealand cheese in 8 ounces and 1 pound wedges, but of course you can also buy the small 4 pounds wheel.
