This Utah original gets its name from Promontory Summit, the historic location where the Union Pacific and the Central Pacific Rail Road lines linked the country nearly 150 years ago. Beehive's Promontory is the patriarch of the family, it is an Irish style cheese; buttery, full-bodied and lively with snappy, citrus-like and fruity notes. Promontory is made from the milk of Jersey cows that enjoy 350 acres near the salty marshes, ponds and mudflats of the mineral-loaded soil of the Great Salt Lake. The same nutrient-rich soil that feeds thousands of migrating birds, feeds the lush alfalfa that the cows love to eat. Promontory received numerous rewards: a first place at the 2011 American Cheese Society, another first place at the 2008, 2009, 2011 and 2012 Idaho Milk Processor's Association competition and a bronze medal at the 2010 World Cheese Awards. read more...
