Tarago River Cheese Factory is located close to Melbourne in Australia overlooking the Tarago River Lake. In 1982, two families, the Jensens and the Johnstons, who are still running the business, started to make blue cheeses, later a brie and cheddars. Goat's milk Cheddar cheeses such as this mature cloth bound version are their latest addtion. After rubbing salt into the surface the cheese matures in cold damp cellars for 9 months. A natural rind develops and the cheese breathes during its maturity, developing a full mellow flavor and a pale yellowish caramel color. We cut and wrap this cheese in wedges of 8 ounces and 1 pound....
