Caerphilly

Caerphilly is a traditional Welsh cheese named after the town and county in South Wales, where it was first produced by local farmers for domestic use in order to use up surplus milk.
Gorwydd, a family farm, just outside the village of Llanddewi Brefi, in Ceredigion, West Wales is the home of the Gorwydd Caerphilly, established in 1996. Gorwydd Caerphilly is a mature caerphilly made to a traditional recipe, using raw unpasteurised milk and GM-free traditional animal rennet.
This cheese is matured on the farm for 2 months and exhibits a fresh lemony taste with a creamy texture to the outer and a firmer but moist inner.

Cornish Yarg

Cornish Yarg is an attractive little Cornish cheese and has a unique covering of local nettle leaves which gives it a slightly vegetal or herby taste. Using nettles in this way was once quite common in this part of the world but the practice largely died out in the last century.
The name Yarg does not relate to old Cornish but is simply 'gray' spelt backwards. Gray was the name of the cheese-maker who developed the cheese from some old recipes found in an attic.
The nettles give the cheese a grayish-green rind which contrasts with the very white paste. The texture is similar to Caerphilly but the flavor is not really the same. The young cheese is fresh and lemony with a touch of herbs. Old...

Lancashire

This traditional handcrafted Lancashire Cheese has been produced on the Beesley Farm in Goosnargh, for 3 generations. The cheese is known as Mrs Kirkham's Lancashire Cheese as she has made it herself for the past 25 years as part of a small family business.
The raw milk used in our cheese is produced on the farm from their own herd of Friesian Holstein cows. The cheese is matured for at least 6 weeks before it leaves the farm, this produces a cheese that is mild, creamy and slightly crumbly. The cheese continues to mature for up to 12 months which produces a fuller and more rounded flavor.
