The cheese is made in small 5-ounce disks and it develops a lively white velvety coat. The inside of the cheese is soft with a slightly firmer heart. When you eat the cheese you can taste the whole milk; it also salty. It is aged 30 days before it leaves the farm and seasonal variations in the milk may result in variations on the surface and flavor of the cheese.
Constant Bliss was awarded a second place in the soft ripened cheese category at the American Cheese Society Competition of 2009.
