Constant Bliss is a farmstead small bloomy-rind cheese, based on a Chaource recipe, but turns out to be quite different as it has no added cream. Constant Bliss is made with pasteurized milk from Ayrshire cows.
The cheese is made in small 5-ounce wheel and it develops a lively white velvety coat. The inside of the cheese is soft with a slightly firmer heart. When you eat the cheese you can taste the whole milk; it also salty. It is aged 3-6 weeks before it leaves the farm and seasonal variations in the milk may result in variations on the surface and flavor of the cheese.
Constant Bliss was awarded a second place in the soft ripened cheese category at the American Cheese Society Competition of 2009.
