Montegrappa is an aged cow's milk cheese from the Veneto region of Northern Italy; the cheese takes its name from a nearby mountain. Montegrappa is made by the same cooperative that makes Asiago Montegrappa is a large cheese of about 25 pounds that is aged for 8 months. It has a natural rind that has its name brandished into it.
