Bucherondin is made with pasteurized milk and has the shape of a log - 'buche' is French for log and 'bucheron' means a woodcutter or lumberjack. Bucherondin has a wrinkled bloomy rind that resembles the bark of a tree. This gourmet cheese is semi-soft, and has a dense, flaky paste and the flavor of Bucherondin is mild when young tht sharpens with age.
