Beaufort

Beaufort is France's answer to the Swiss Gruyère. Beauforts darkly rich flavor is the result of ripening in the cool and humid caves and cellars of the Haute-Savoie Mountains for at least 6 months and sometimes up to 18 months. The village of Beaufort is situated in a remote part of the Savoie region. Here Tarentaise cattle graze the lush Alpine meadows to give milk which is full in flavor.
Beaufort cheese has a smeared rind, which is rubbed, clean and robust with a uniform yellow to brown color. The paste is smooth and very firm but supple with few holes or cracks called 'oeil de perdrix' or 'partridge eyes' with an ivory to pale yellow color.

Comté A.O.C. is an ancient French gourmet cheese, also known as Gruyere de Comte; it is made in the Massif of the Jura, a region composed of medium range mountains situated in Franche-Comté, which lies between the Vosges and the Haute-Savoie. The Montbeliard cow is the only breed of cattle whose milk is authorized for making Comté.
The cheese is hard, straw-colored, contains some medium-size holes and has a tendency to crack on cutting. Comté has a floral aroma with nutty fudge flavors developing in the more mature cheese. Laguiole

In the past, Laguiole was made on the Aubrac highlands. Its French gourmet quality is now guaranteed by an AOC label. It owes its name to Laguiole city in Aveyron which is also very famous for its knives.
Laguiole cheese has a thick brown rind and a firm pale-yellow paste and has a rustic taste that will remind some people of the Aubrac highlands. Its maturing process lasts from 4 to 12 months.

Mimolette is a gourmet cheese that looks like an orange soccer ball with a light powdering of snow. This mature version of the French cheese from the Lille is a pressed cooked cheese that is aged for 12 months.
Mimolette has a distinctive flavor of butterscotch and caramel. The rind is fairly smooth in the young cheese but, as it ages, it becomes thick and deeply pitted. Cheese mites proliferate in these pits to give the characteristic powdery appearance of the older cheese.
The paste is dyed to a deep orange color which darkens toward the rind. The texture is hard-firm and breaks rather like fudge....

The French gourmet cheese Salers is often compared to and confused with another gourmet cheese Cantal. Salers is made only from the milk of cows that graze on mountain pastures in the summer while Cantal can be made from the milk of other seasons.
Salers real French appellation is "Salers from the high mountains." In the Salers region, mountains are covered with snow half the year, which gives the summer grasses a special richness. Gentian and blueberry grow here amongst the lush pastures.
