The first wheel of Flagship, Beecher's signature cheese, was handcrafted in November of 2003. Flagship is a semi-hard cow's milk cheese with a uniquely robust, nutty flavor. It is made with pasteurized milk, carefully aged for 1 year under the watchful eye of the cheesemaker to fully develop its complex flavor and ever-so-slight crumble. At the first annual American Cheesemaker Awards in California in 2007, Flagship was awarded 'Best Semi-Hard Cow's Milk Cheese', and in 2009 this gourmet cheese was awarded a second place in the Aged Cheddars Category at the American Cheese Society Competition.
