Wijngaard Cheese, the makers of Reypenaer and Reypenaer VSOP, were having some production difficulties with Reypenaer VSOP. They have overcome the problems, but the Reypenaer VSOP still needs time to age to its perfect flavor and texture and sadly it will not be available until 2015. Luckily there is still the 1-year old Reypenaer, the multiple award–winner, definitely a worthy alternative. Magnificent and well deserved of the V.S.O.P. designation. This delicious gourmet cheese from the Netherlands is matured for about 2 years and during that maturation sheds approximately 25% of its original weight. The white spots you will see on the surface indicate the start of mineral and protein crystallization. Gouda may be the best-known Dutch cheese type, and the name Gouda is derived from the Dutch city Gouda, but Gouda cheese is often imitated. Gouda and Gouda-style cheeses are recognizable in their shape, most of them are wheels, big wheels around 25 pounds in weight. As Gouda refers to a particular style cheese, there are of course many varieties; length of ageing, method of aging, ingredients used, rind color and herbs, or spices added.
