Gouda may be the best-known Dutch cheese type, and the name Gouda is derived from the Dutch city Gouda, but Gouda cheese is often imitated. Gouda and Gouda-style cheeses are recognizable in their shape, most of them are wheels, big wheels around 25 pounds in weight. As Gouda refers to a particular style cheese, there are of course many varieties; length of ageing, method of aging, ingredients used, rind color and herbs, or spices added. Rembrandt is clearly named after the famous Dutch painter Rembrant van Rijn. This Gouda cheese is aged over 1 year and has a very nice rich, deep hearty flavor, not overly sharp, with a touch of tanginess. Rembrandt has a firm texture, but melts easily.
The cheese can be sliced for your sandwiches, and will do fantastic in pairing with many full bodied red wines. read more...
