Holly Springs is an aged raw goat's milk cheese made at the Sweet Grass Dairy in Southern Georgia. This gourmet cheese is aged for at least 60 days. Holly Springs is made in a soft curd style similar to Sweet Grass Dairy's cow's milk cheese, Thomasville Tomme.
