Great Hill Blue is an internally ripened variety made with raw, unhomogenized milk resulting in a true gourmet quality cheese. The cheese has a slightly dense and yellow curd as no bleach or food colorings are added.
The cheese is made at the Great Hill Dairy located on the shores of Buzzard's Bay in Massachusetts, known for its outstanding herd of Guernsey.
The unhomogenized milk results in a fully flavored and smooth tasting gourmet cheese. Each cheese form is hand-filled using traditional techniques, making a 6 pound wheel.
We cut and wrap this gourmet cheese in wedges of 8 ounces and 1 pound.
