The Georgian Green Hill is a soft-ripened, double-cream cow's milk cheese that is made with pasteurized milk and ages around 3-6 weeks.
This gourmet cheese has a white, bloomy rind; and has a rich and smooth flavor. The color of the cheese is bright yellow, caused by the higher butterfat composition in the milk due to rotational grazing at a dairy where Sweet Grass Dairy purchases the milk from.
Green Hill has a buttery taste and soft, creamy texture with a thin to medium rind. The cheese will occasionally develop some blue mold on the surface which is natural and safe to eat.
Green Hill was awarded a first place in the soft ripened cheese category at the American Cheese Society Competition of 2007 and a third place in the 2010 competition. Also in 2010 Green Hill was awarded a Silver Medal in the World Cheese Awards.
