Holly Springs is an aged raw goat's milk cheese made at the Sweet Grass Dairy in Southern Georgia. This gourmet cheese is aged for at least 60 days.
Holly Springs is made in a soft curd style similar to Sweet Grass Dairy's cow's milk cheese, Thomasville Tomme. This means that early in the process, the curds are placed in the molds when they are still warm and soft; therefore, the end result is the semi-soft texture and creamy finish and a natural, light brown rind.
The cheese has a white color; and complex and sweet and nutty flavors, the cheese becomes harder over time. The average wheel of Holly Springs weighs approximately 10 pounds. We cut this cheese in wedges of 1 pound and 8 ounces.
