Ivernia is a hard Italian-type cheese with a fresh, piquant flavor. It is aged for 3 years to develop elegant, complex flavors. Some say it has some similarities with Gruyère. The Iverni were an ancient people of Ireland, settling on the island around 500 BC. The name is thought to have derived from Erin, the ancient Greek mythological name for Ireland, which is itself derived from the word Éire, the name for Ireland in our indigenous Celtic language. This gourmet cheese is hard enough to grate over your dish of pasta, vegetables or your soup and delicious and interesting enough to slice and eat on its own....
