Kefalotiri or Kefalotyri is a gourmet mountain cheese made with sheep and goat's milk and sea salt, made throughout Greece and the Greek Islands. It is similar to Kefalograviera

Kefalotiri has a somewhat sharp, salty taste and a unique aroma which is similar to the Italian Pecorino Romano and a flavor that hints towards a Gruyere. Kefalotyri is harder and saltier than Kasseri and it's usually grated over sauces, stews, and salads. It also makes an excellent saganaki.
