Milleens is an artisanal washed rind cheese with a soft paste, made from cow's milk on the rugged Beara peninsula of South West Ireland. The complex and delicate cheese is made from the milk of Friesian cows grazing the mountains and pastures of the peninsula. Milleens is the longest established Irish farmhouse cheese.
The cheese has a mottled peach and sometimes fiery orange washed rind and within is a paste that goes from semi-firm to spilling cream. The flavor is a complex mix of delicate herbs along with a spicy tang.
