Pierce Pt is a delicious, semi-firm, creamy cheese made with organic whole cow's milk. It is spritzed in organic Riesling and rolled in dried herbs - fennel, coriander, lemon grass, oat straw, calendula, juniper berries, camomile and red clover - all from the Tomales Bay coastal region.

The result is a delicious gourmet cheese, semi-firm yet creamy, complex yet never overpowering, and does not need additional flavor; a plain cracker or French bread will do just fine. Pierce PT received a 1st Place award at the 2006 American Cheese Society Conference.

The makers of Pierce Pt may be inspired by the Corsican Brin d'Amour, this Californian cheese is an American treasure that comes out in the fall.
