Winnimere is a unique seasonal cheese, made from raw Ayrshire cow's milk. Jasper Hill Farm's cheese shows similarities with the Vacherin Mont d'Or.

The cheese is washed with a lambic-style beer that is brewed from the farm's own wild yeasts, and wrapped with a strip of spruce bark cut from the farm's own trees - farmstead it is. The cheese spends 60 days in Jasper Hill's aging room and the result is aromatic cheese that may turn some of you off at first, but this artisanal cheese has a smooth sweet milky flavor accented by a woodsy aromatic depth. It is really a cheese that it absolutely devine.

This is one of those cheese you have to try at least once in your life. This cheese does not pair well with wine; you need a strong counterpart, a beer with a strong personality, e.g. dark, dry wine-like beers, robust beers.
