Decaf Colombian Supemo La Valle Verde coffee, as with most of the world's great coffees, is released of its acidic agents and impurities by a 'washing' process. This process removes the pulp and skin from the bean while the fruit is still fresh. The bean is then soaked in enzymes to help loosen the excess pulp. The beans are then washed to remove all excess fruit pulp. This washing process is occasionally done by a machine and is then called demucilage.
Prior to roasting, the beans moisture level is increased causing the caffeine to rise to the surface. Using a simple wash process and most all of the caffeine has been removed. Never would we let decaffeination process affect the flavor of our roast or of the brew. We took the caffeine out and left the gourmet flavor in!
