Yemen's coffee culture is unlike any other place in the world. This is because of their old trade style. Instead of exporters buying from farms, they buy through a large network of middlemen. Local buyers are given coffee in the pod (the whole dried cherry) that is stored in underground caverns. The coffee that is exported isn't the new crop but the oldest of their stocks. This paves the way for specialty coffees like Arabian Mocca. Arabian Mocca is grown in the northern mountains of Yemen, and is the oldest and the most traditional coffees in the world. Since it has been refined and developed the same way for centuries, grown on rich soil of mountain terraces and naturally dried, it is also one of the most luxurious. The town of Mocha has been noted for the export of coffee from which it was given its name. The term mocha has become a synonym for the high-quality of Arabica coffee. Mocha's founding in the 14th century is commonly associated with Shaykh Shadhili, the Muslim holy man who purportedly introduced coffee drinking to Arabia.
