San Giacomo did not use any flavors, but produced this wonderful vinegar with only apple juice from apples from Trentino. While cooking the juice, the room is filled with the sweetening smell of apples.
BalsaMela is not as strong and dominant as the traditional balsamic vinegars and is therefore great for seasoning meat, and it does also well with soft and delicate cheese.
