Black Forest Ham or Schwarzwalder Schinken as they say in Germany, is a variety of smoked ham, traditionally produced in the Black Forest. This ham is salted and seasoned with a blend of herbs and spices. Then the ham is cured and smoked for several weeks, during which time the ham acquires its deep red color and the smoking enriches its flavor. Here in the US, in California the Columbus Family makes use of these Old World traditions and creates a delicious Black Forest Ham that weighs approx. 9 pounds.
This type of ham has a pronounced flavor and is a great cold-cut on your sandwich, as a hors d'oeuvre or can be used in your cooking.
