The French fresh Black Summer Truffle, Tuber Aestivum Vittadini, are in season from late-May through September. This truffle is blackish-brown to black and is covered in pyramid-shaped warts that are depressed at the top.
The interior or flesh of the Black Summer Truffle is firm, solid and has a light brown, dark brown color, marbled with numerous, thin, branching veins. The aroma is mild and pleasant and becomes stronger with age and the taste is mild as well and reminiscent of walnuts or hazelnuts. Cooking this mild and delicate truffle will most likely destroy the flavor, instead add thin slices to dishes for the finishing touch.
