Enjoy Black Winter truffles or Tuber Melanosporum, also called Black Diamonds, from Down Under. An Australian agronomist took truffle spores from France and planted them in Tasmania, Australia and the first Australian truffles were harvested in Tasmania in 1999 and there is now a small Australian truffle industry. Perigord Truffles of Tasmania are as rich and delicious as their French ancestors.
The Black Truffle forms a symbiotic relationship with the roots of oak or hazel trees on which it grows. The edible portion, the truffle, is harvested in winter once it has matured and is emitting the sweet perfume it's renowned for. The truffles are found from just below the soil surface to a depth of 4 inches by specially trained dogs that use their sensitive noses to search for the truffles. Pigs are still used successfully by the French in Perigord but Australian producers have found spaniels easier to train and control.
Truffles are formed naturally in the ground therefore each truffle may vary slightly in size and color.
