The next best thing after a fresh Black Summer truffle is a flash frozen fresh Black Summer truffle; the taste is incredibly similar to fresh as the freezing process maintains the flavor and a lot of the aroma allowing you to serve precious truffles all year round. Once you thawed a frozen truffle you cannot refreeze it and have to use it up, alternatively you can use a truffle slicer and slice them while they're frozen and the thin slices will thaw in seconds. The  Black Summer Truffle, Tuber Aestivum Vittadini, is blackish-brown to black and is covered in pyramid-shaped warts that are depressed at the top.

The interior or flesh of the Black Summer Truffle is firm, solid and has a light brown, dark brown color, marbled with numerous, thin, branching veins. The aroma is mild and pleasant and becomes stronger with age and the taste is mild as well and reminiscent of walnuts or hazelnuts. Cooking this mild and delicate truffle will most likely destroy the flavor, instead add thin slices to dishes for the finishing touch.
