This is a flash frozen version of the fresh Black Winter Truffles or the Perigord Truffle - Tuber Melanosporum and therefore a whole lot less expensive, but the taste is incredibly similar to that of the fresh truffle. The freezing process maintains the flavor and a lot of the aroma allowing you to serve these precious truffles all year round. Once you thawed a frozen truffle you cannot refreeze it and have to use it up, alternatively you can use a truffle slicer and slice them while they're frozen and the thin slices will thaw in seconds.
The Perigord truffle is named after the Perigord region in France and grows in symbiosis with oak and hazelnut trees. These Black Winter truffles are found in late autumn and winter and they vary in size from a pea to a tennis ball or bigger, and can even weigh up to 1 kg.
The truffle's skin has brown-black warts and its flesh, the inside is dark grey - black to purple with thin white veins. Its aroma is intense and when cooking always use the truffle as the aroma addition. The black truffle has a stronger and longer lasting aroma than the white truffle.
