Our Featured Gourmet Truffle
This is the fresh Black Winter Truffles or the Perigord Truffle - Tuber Melanosporum. The Perigord truffle is named after the Perigord region in France and grows in symbiosis with oak and hazelnut trees. These Black Winter truffles are found in late autumn and winter and they vary in size from a pea to a tennis ball or bigger, and can even weigh up to 2 lbs./1 kg.
The truffle's skin has brown-black warts and its flesh, the inside is dark grey - black to purple with thin white veins. Its aroma is intense and when cooking always use the truffle as the aroma addition. The black truffle has a stronger and longer lasting aroma than the white truffle.
