Enjoy Black Winter truffles or Tuber Melanosporum, also called Black Diamonds, from Down Under. An Australian agronomist took truffle spores from France and planted them in Tasmania, Australia and the first Australian truffles were harvested in Tasmania in 1999 and there is now a small Australian truffle industry. Perigord Truffles of Tasmania are as rich and delicious as their French ancestors. The Black Truffle forms a symbiotic relationship with the roots of oak or hazel trees on which it grows.
