Grains of Paradise, harvested in Ghana, Africa, taste pungently hot and peppery, with a fruity note of citrus, and traces of cardamom and ginger. It is an important ingredient in Ras El Hanout. The seeds are excellent in mulled wine, in braised lamb dishes, and with vegetables, including eggplant, potatoes, and pumpkin. Grind them before use and add at the last stage of cooking. In Scandinavia, they are used in aquavit.
Other names for Grains of Paradise are Melegueta Pepper or Alligator Pepper.
