Paccheri are large, hollow, tube-shaped straight cut pasta, approx. 3/4 - 1 inch in diameter. Paccheri will flatten when they are cooked. The paccheri pasta shape is similar to rigatoni, but are shorter and have a larger diameter.
It is said that paccheri served as a vehicle to smuggle banned garlic cloves across the alps from Italy into Prussia (now known as Austria). Prussian and Hungarian Princes enjoyed the Southern Italian garlic, with those large robust and pungent cloves. To protect their garlic farmers, the Prussian closed the border with Italy and the Italian garlic trade ceased. Sicilian pasta barons created Paccheri pasta, perfectly shaped to hide 4 or 5 of their Italian garlic cloves and continue the garlic trade.
L'Antica Rocca Pasta is certified USDA organic and produced in Siena, Italy. The wheat used to produce the pasta is sown on the Molino Val Orcia Farm where it is estate grown, produced, and packaged by hand. This superior pasta will cook up perfectly every time because of the high quality of the grains used to produce this fine product.
