Ras El Hanout is a complex melange of over 20 spices and herbs from North Africa. It is the basic to cooking of Algeria, Tunisia and Morocco. This blend is called 'head or top of the shop' or 'top of the shop' as it contains the best spices and herbs the shop has to offer.
Ras EL Hanout is not a strictly defined blend of spices; it is up to the blender to create is secret combinations; typically the blend includes cardamom, clove, cinnamon, ground peppers, coriander, cumin, nutmeg, tumeric. It is usually used with game, lamb, rice, couscous and tangine. Ras El Hanout is somewhat curry-like with a spicy kick, a floral fragrance and subtle nuances within an overall robust flavor. Due to this bold combination of flavors it is very versatile and will add a golden color and a rich aroma to chicken, lamb, and vegetable dishes as well as rice and couscous creations.
