Trofie is a traditional, Ligurian specialty pasta, that some call trofiette. It has some similarities with Fusilli, but is smaller; thin, hand-rolled tight twists, about 1-2 inches long. This pasta is traditionally served with pesto.
The manufacturer Maestri Pastai makes excellent dry pastas that, cooked al dente, are delicious, soft with a bite, but not soggy and taste as if they were made fresh. Definitely a high quality pasta that you will like to use in your Italian dishes.
