Chaumes Mediterranee

A delicious taste of a vegetable - cheese combination
Ingredients
1 small aubergine
2 whole tomatoes
1 whole yellow pepper
1 small zucchini
3 tablespoons olive oil
4 slices Chaumes cheese, 1/2" thick
4 slices ciabatta bread
Instructions
Rinse the aubergine and cut it in 8 equal slices. Rinse the tomatoes and cut each in 6 equal slices. Rinse the pepper, quarter and seed them. Rinse the zucchine and slice it diagonally in 12 equal pieces. Heat the grill.
Coat the slices of aubergine, pepper and zucchine on both sides with olive oil. Place the slices under the grill and bake them 6-8 minutes, turn them half way through. Sprinkle oil on the tomato slices and bake these together with the cheese in 2 minutes under the grill, turn them half way through. Toast the slices ciabatta bread in the toaster.
Stack the vegetables and cheese on 4 plates: aubergine, cheese, tomato, 2 slices of zucchini, augergine and finally zucchine again. Serve with toasted ciabatta bread
