Mix a dressing from the shallots, lime juice and lime peel, garlic, capers, mustard seeds and salt and pepper. Dry the mozzarella and cut each ball in equal slices. Coat the mozzarella with flour mixed with salt and pepper; get rid of the overabundance of flour.
Heat olive oil in a non-stick skillet and bake each side of the cheese slices one minute.
Arrange the cheese over 4 plates and drizzle with the dressing.
