Caciotta al Tartufo is a black truffle infused cheese made with pasteurized cow's and sheep milk in the region of Umbria. The small wheels weigh about 1.5-2 pounds.
This semi-soft gourmet cheese is aged about one month. The paste is mild and gentle in flavor and texture; an original delicacy that provides an interesting balance between the truffle flavor and the flavor of the cow's/sheep's milk combination. The color is this rindless cheese is pale with small spickles of truffle. This cheese would be a nice addition to a cheese platter.
We cut and wrap this cheese in pieces of 1 pound and 8 ounces or you can buy a small wheel of approx. 2 pounds.
