Montegrappa is a large cheese of about 25 pounds that is aged for 8 months. It has a natural rind that has its name brandished into it. The interior of this Italian gourmet cheese is firm, dense, cheddar-like, is somewhat dry with an ivory color and an occasional small eye. It smells faintly of brown butter and has a really nice flavor of toasted walnuts and it is sweeter than the Asiago. A great cheese to melt in a fondue to over shaved in a salad.
