L'Etivaz AOC is a traditional and artisanal cheese hand-crafted over a wood fire, using raw milk flavoured by Alpine flora. The cheese is from the mountains of Western Switzerland and Etivaz cheese can be seen as a little brother of the well-known Gruyère cheese.
This gourmet cheese has a very distinct taste of the alpine pastures, filled with wild flowers and herbs, and the smoke of the spruce fire resulting in a superb smooth flavor that gives you a melt-in-the mouth feeling.
The cheese is creamier and less sharp than the Gruyère.
