The French are renowned to have a vast collection of gourmet cheeses and it would not be difficult to create a number of assortment to encompass all the cheeses from France. Our Handful of French Cheese shows the diversity of cheeses this country has to offer:
Comte - (8 oz.) also known as Gruyere de Comte, is made from the milk of the Montbeliard cow. The cheese is firm, straw-colored, contains some medium-size holes and has a tendency to crack on cutting. Comte; has a floral aroma with nutty fudge flavors developing in the more mature cheese.
Port Salut - (8 oz.) - a traditional monastery cheese and is also known as Saint Paulin. Originally produced by Trappist Monks in the 19th century, this was the first French cheese produced from pasteurized milk. It is soft enough that it is spreadable.
Roquefort - (8 oz.) has a wonderful aroma, a rich taste; the saltiness increases with the incidence of veining. The overall flavor is piquant and sharp.
Saint Andre - (7 oz.) is a triple cream cheese made with cow's milk, it has a bloomy white rind, that is as soft as velvet and the flavor is rich, creamy, all soft.
