Essenza Balsamic Vinegar

Essenza is a brighter balsamic with more sugar and a less developed flavor of the wood than the traditional balsamic vinegars, resulting in a velvety, well-developed taste, a tinge of acidity and a fruity aroma. San Giacomo's Essenza is the same cooked must (Lambrusco and Trebbiano grapes) used for producing Aceto Balsamico Tradizionale. The difference is in the aging, where the Essenza aged between 8 and 10 years rather than the 12 years specified as the minimum for the tradizionale consortium.
