Aged Red Leicester (officially called Leicestershire) is a cloth-bound cheese that is matured for 6 months, resulting in a hard, flaky, beautiful orange colored cheese with a slightly sweet, caramelized flavor. It is the only pasteurized Red Leicester produced in the county of Leicestershire by the Long Clawson Dairy, also known for the making of the famous Blue Stilton.
In 2015 this traditional British cheese received a Gold Award at the International and British Cheese Awards.
