Long Clawson Dairy is the producer of our Blue Stilton cheese. Thomas Hoe Stevenson was one of the founder of the Long Clawson Dairy starting in 1911. For more than 100 years they are crafting 100% British cheese, using century-old expertise alongside innovative techniques. Blue Stilton is made in Leicestershire, UK, using local cow's milk and is protected by a PDO. Long Clawson is one of only 5 dairies in the world licensed to make Blue Stilton.
Blue Stilton becomes milder and mellows with age and a little more crumbly, making it a perfect introduction to blue cheese. The cheese is drum shaped with a thick, hard crust which is usually grayish-brown and slightly wrinkled with whitish powdery patches. The interior of the cheese is soft, rich and creamy but still has that distinctive blue cheese tang.
Like any other cheese, serve Blue Stilton at room temperature, with salty crackers and pair it with a glass of Shiraz.
We hand-cut and wrap the Blue Stilton in wedges of 1 pound and 8 ounces.
