It is dense, mildly salty, yellow-orange in color and has a slightly tangy flavor. Cheshire is made using vegetarian rennet and pasteurized cow's milk and is ripened for 2-3 months.
Cheshire Cheese is produced in the English counties of Cheshire and the neighboring four counties of Denbighshire, Flintshire, Shropshire and Staffordshire. Reputed to have been made since Roman times, the cheese is also mentioned in the Domesday Book of the 11th century.
Try this cheese, sliced onto any sandwich or cubed for any platter. Try a simple fruity Pinot Noir from either California or Burgundy. For a white, try an oaky Chardonnay, steely Alsatian Riesling, or a fruity Sauvignon Blanc. A Pale Ale is a good match to Cheshire as well.
